Henry's Okra Soup
Henry's Okra Soup
Okra Soup is what Daddie made on rainy, cold days. We didn't do a lot of chili but soups found there way to bowls in our home on many occasions. Make this your own!
Ingredients:
- Canola or vegetable oil
- 1lb of your favorite meat for seasoning (we use Smoked Neckbones)
- 1 yellow onion
- 1 teaspoon of onion powder
- 1/2 teaspoon of Paprika
- 1 teaspoon of black pepper
- CarVen's All You Can Eat*
- 1 can of diced tomatoes (in the juice)
- 1 - 1 1/2 pounds of okra
- 2 cups of corn
- 2 cups of beans (we use lima or butter beans)
- Cooked rice, cornbread or both
- (oh and by all means add some SHRIMP! :-)
Directions:
- Boil 2-3 quarts of water
- Add chopped onions and salt to taste (if you want)
- Add seasoning meat
- Let it simmer for about 3 hours
- After simmering for 3 hours, add onion powder, paprika, black pepper and CarVen's All You Can Eat, and your diced tomatoes and simmer for 20 minutes
- Add chopped or cut okra and simmer for another 10 minutes
- Add beans and corn and let simmer until you are ready to serve over a bed of rice or cornbread
*Always remember to "shake until your soul is satisfied!"
